As blackberry season winds down here in B.C., it always feels like a subtle sign that the seasons are changing. The mornings are cooler, the evenings arrive sooner, and if you live near the coast, your freezer is likely already packed tight. Buckets of wild blackberries picked from neighbourhood paths, forest trails, and overgrown corners have a way of filling every last inch before you realize what’s happened.
Most of us fall into a familiar routine with our berry stash. There’s jam simmering on the stove, pies planned for the colder months, and a few containers tucked away “just in case.” But once you’ve covered the classics, it’s fun to try something new — especially a recipe that feels cozy, simple, and just a little unexpected. This one fits that bill perfectly.
Blackberries and coconut are a pairing that works effortlessly. Blackberries bring a bright, tangy bite with a touch of sweetness, while coconut adds richness and a smooth, nutty depth. Together, they create a flavour that feels both refreshing and indulgent, striking that sweet spot between light and luxurious.
The coconut gently softens the sharper edge of the berries, creating a creamy, velvety texture, while the blackberries keep everything lively and fresh. It’s the kind of combination that feels refreshing after a long day, yet indulgent enough to feel like a well-earned treat. The kind that encourages you to slow down and savour it — maybe even go back for another round.
For this recipe, we’re using Summerland Sweets Blackberry Syrup to capture that deep, concentrated blackberry flavour with minimal effort. Of course, making your own syrup at home is always an option. It only takes a few pantry staples and about 10 minutes on the stove. And if you already have a favourite syrup, feel free to use it — just keep in mind it may slightly shift the final flavour. Either way, it’s a delicious way to hold onto blackberry season just a little longer.
Ingredients
*Try to keep the syrup on the runnier side. If you are using Summerland Sweets Blackberry Syrup, combine 250g Syrup and 250g Water.
