Controlled Entropy Distilling was born from a love of creating, experimenting, and pushing boundaries. For years, we dreamed of owning a distillery—testing flavour combos, learning fermentation, and turning our house into a science lab. In 2021, after Shea’s MS diagnosis reminded us that life is too short to wait, we began building our dream. Two years later, in August 2023, we proudly opened our doors and can’t wait to see where this journey takes us.

In learning about the distillation process, we realized that distilling is essentially the manipulation of alcohol’s entropy. Creating quality spirits is about knowing how to properly control the entropy. What better way to celebrate our love of science than with a nerdy oxymoron?
